Pitta recipe: Baby spinach salad with mango

Embrace Sweet, Bitter, Astringent, Cool & a bit moisture

Avoid Spicy, Salty, Sour, Hot, Oily & heavy

INGREDIENTS for 2 portions:

-fresh baby spinach
-fresh coriander
-fresh parsley
-fresh mint
-walnut oil
-juice of 1/2 lemon


  1. Prepare dressing: Lemon juice mix with honey and oil.
  2. In a large bowl, mix the herbs (chopped parsley, coriander & mint) with baby spinach and prepared dressing. Decorate with mango on the plate.
